Smokin' corn fritters

4 Cups of fresh or frozen corn (defrosted)

2 Eggs

1 Cup of milk

Flour to mix

1 teaspoon of baking powder

assortment of you favorite vegetables

1/4 Cup of Just Smokin'

Place the corn on a roasting sheet and drizzle with oil. Roast @ 350f until it starts to become golden around the edges. Remove corn and allow to cool.

Next make the batter by combining all the wet ingredients and then mix well. in a separate bowl sieve the dry ingredients and then add the two together and you should have quite a thick batter. Be careful not to over mix the batter. Next cut up you vegetables (you can use leftovers if you like) add the vegetables to the batter along with the corn and Just Smokin'

The batter should coat the vegetables and check the seasoning. Fry on a griddle until golden brown on either side, if you like them thick finish the fritters in the oven to ensure they are fully cooked. You can also deep fry the batter if you prefer.

Make little ones and serve them at parties and for hockey games in front of the TV



Grilled pork chop with spicy onions

4 4 large Yukon gold potatoes

4 8oz Pork loin chops

1 2 Large white onions

50g Butter

100ml Dark beer

100ml Just Smokin'

Marinate the pork chops in Just Smokin' for approx 1 hour (Or more if you like) Cook the potatoes in salted water (always use cold water) and once cooked mash with half the butter.

While the potatoes are cooking in a heavy bottomed pot add the onions and the other half of the butter,  beer and the Just Smokin'. be careful not to over heat the pot or they will burn.... and cook until the onions are soft.

Grill the pork chops to your liking and allow to rest. divide the potatoes between 4 plates and top with a pork chop finish with the spiced onions and a dollop of sour cream.
