Cheesy Scones with Red Onion MarmaladeI served these at the second demo at Mrs.McGarrigles, and so many people asked for the recipe, so here it is! You can cut them small or large, depending on how you are serving them.

300g All purpose flour

2 Tspn. Baking powder

1 Tspn Mustard powder

1 Tspn Salt

50g Butter at room temperature

150g Your favourite locally produced old mature cheddar

2 Large Eggs

4-6 Tbsn Milk

Heat the oven to 425f. Sift the flour with the other dry ingredients. Rub in the butter until it resembles fine bread crumbs, and then add the shredded cheese, followed by adding the eggs and 1/2 the milk. Mix until the dough comes away from the sides of the bowl. add a touch more milk if needed.

Roll out on a floured surface and using a cookie cutter of you choice, cut out scones! Place on a well oiled baking sheet and bake for approx. 15-20 minutes, depending on the size of scone you make!

Enjoy them split and topped with Mature cheddar, a teaspoon of marmalade and a sprig of parsley,
